Amelia's Gluten Free Cookies!
Even people who eat gluten ask me for this recipe - probably because they're the tastiest biscuits in the world!

150g butter
1 cup sugar
1 egg
¼ cup cocoa
1 ¼ cup gluten free flours
1/3 cup chocolate chips
1/3 cup chopped almonds

Turn oven to 180oC

Soften butter, beat in sugar then egg.
Add cocoa and gluten free flours until combined.
Stir through almonds and chocolate chips. 

N.B. The cookie mix should be soft and sticky and firm enough to keep it's shape.  If it's too hard add a little milk, rice milk or even water will do at a pinch.

Put, round spoonfuls of dough on a buttered tray, and bake in oven for approx 15 minutes.  The aim is to have the cookies crisp on the outside and soft in the middle!

Leave a moment to cool

Take off tray and enjoy!
